Chicken and Wild Rice Soup

Ingredients
•  14 oz. SYSCO Imperial Chicken Gravy Mix
•  4 qts. Water
•  1 c. SYSCO Classic Butter
•  1 c. SYSCO Classic Onions, chopped
•  4 c. SYSCO Imperial Celery, chopped
•  2 c. SYSCO Imperial Mushrooms, sliced
•  1 c. SYSCO Imperial Carrots, shredded
•  5 c. SYSCO Imperial Wild rice or long grain and wild rice, cooked
•  2 c. SYSCO Classic Chicken, cooked and cubed
•  2 c. Water
Preparation
1.  Prepare SYSCO Imperial Chicken Gravy Mix according to package directions using 4 quarts of water for preparation. Set aside.
2.  Melt butter in an 8-quart stockpot. Saute onions, celery, carrots and mushrooms in butter over medium heat unitl onions are translucent, about 5 minutes.
3.  Combine prepared gravy, onions, celery, carrots, mushrooms, rice, chicken, additional 2 cups of water and wine, stirring well. Add salt and pepper to taste.
4.  Simmer for approximatly 10 to 15 minutes over low heat, stirring frequently to prevent sticking (thin with additional hot water if needed.) Garnish with fresh chopped parsley or tarragon.
5.  Add-Ins: 1 cup chopped water chestnuts, 3/4 cup slivered almonds, or 1 cup chopped polish sausage.
